Oat Flour Pancakes w/ strawberry cream

We like using oat flour because it is softer on our stomach / no bloating or gas, and a recipe like this as a Sunday brunch keeps us full until dinner. Since oats have fiber and more nutrients, including vitamins, minerals and protein- compared to white flour.


Combine DRY ingredients:

  • 2 cups oat flakes- grind this into a flour using blender or food processor until soft and no chunks.

  • 2 tsp baking powder

  • 1/4 tsp sea salt

  • 1 tbsp cane sugar

  • 1 tsp spice- we used pumpkin pie blend

Combine WET ingredients:

  • 2 large eggs

  • 1 cup (1/4 cup yogurt + 3/4 cup milk or cream)

  • 2 tsp lemon juice or apple cider vinegar

Extra ingredients:

  • Oil for cooking on the skillet

  • Keep water near to thin our batter if it is too thick

Combine the WET & DRY ingredients.

Heat a skillet with oil (we used olive oil).

Pour on a hot skillet and cook on medium heat until brown on each side.

  • In a bowl pour 1/4 cup whipping cream

  • 1 tbsp strawberry jam- this was our first summer preserve this year, I love fresh strawberries!!

  • 1/2 tsp cane sugar

  • Whip on high with a frother or whipping machine, until fluffy

Time to assemble!!!

Butter pancakes.

Top with cream and drizzle with maple syrup.
