We like using oat flour because it is softer on our stomach / no bloating or gas, and a recipe like this as a Sunday brunch keeps us full until dinner. Since oats have fiber and more nutrients, including vitamins, minerals and protein- compared to white flour.
OAT FLOUR PANCAKES RECIPE
Combine DRY ingredients:
2 cups oat flakes- grind this into a flour using blender or food processor until soft and no chunks.
2 tsp baking powder
1/4 tsp sea salt
1 tbsp cane sugar
1 tsp spice- we used pumpkin pie blend
Combine WET ingredients:
2 large eggs
1 cup (1/4 cup yogurt + 3/4 cup milk or cream)
2 tsp lemon juice or apple cider vinegar
Oil for cooking on the skillet
Keep water near to thin our batter if it is too thick
Combine the WET & DRY ingredients.
Heat a skillet with oil (we used olive oil).
Pour on a hot skillet and cook on medium heat until brown on each side.
STRAWBERRY WHIPPED CREAM RECIPE
In a bowl pour 1/4 cup whipping cream
1 tbsp strawberry jam- this was our first summer preserve this year, I love fresh strawberries!!
1/2 tsp cane sugar
Whip on high with a frother or whipping machine, until fluffy
Time to assemble!!!
Top with cream and drizzle with maple syrup.
