Naturally Sweet Date Loaf

We love to make this recipe for lunches! It is a naturally sweet and a higher protein loaf, made with dates, milk and just a touch of brown sugar. Bonus- our daughter loves it!
Begin with heating 1.5 cups of milk on the stove (we use whole milk or half and half, whatever needs to be used up), bring to just about to boil.
Pour the hot milk on:
2 cups (250g) of pitted dates
1/2 cup butter
1/2 cup brown sugar
Let soak for 10 minutes to soften the dates, then blend mixture in the blender to make a batter.
Whisk together:
1 egg
1/4 cup olive oil
1 tbsp of lemon juice
Then combine the two wet ingredient mixtures together.
Dry ingredients:
2 cups allpurpose or spelt flour
1 tsp baking soda
1 tsp baking powder
2 pinches of sea salt
Option to add cinnamon
Whisk these powders together.
Combine the wet and dry ingredients together. Mix well to make a uniform batter. Stir in any extras like walnuts if you want.

Pour batter into a well buttered loaf pan.
Bake at 350F for 60-65 minutes, until the toothpick comes out just about clean.
Allow to set for a bit in the pan before dumping it out on a cooling rack or wooden cutting board to fully cool.
Try your best to wait at least 20 minutes until cutting the first slice! This helps with the integrity of the loaf, for better storage.
