Naturally Sweet Date Loaf

We love to make this recipe for lunches! It's a naturally sweet and higher protein loaf made with dates, milk, and just a touch of brown or cane sugar. Bonus: our daughter loves it!


Ingredients You'll Need

Begin by heating 1.5 cups of milk on the stove. We usually use wholle milk. Bring it to just about a boil.


Pour the hot milk on:

  • 2 cups (250g) of pitted dates

  • 1/2 cup butter - 113g

  • 1/2 cup brown or cane sugar


Let this mixture soak for 10-15 minutes to soften the dates. After soaking, blend the mixture in a blender to create a smooth batter. I usually just pop all the ingredients in the blender from the soaking stage.


Whisk together:

  • 1 egg

  • 1/8 cup olive oil

  • 1/2 lemon or orange juiced + zest


Combine these two wet ingredient mixtures together.


Dry ingredients:

  • 2 cups all-purpose flour

  • 1 tsp baking soda

  • 1.5 tsp baking powder

  • 2 pinches of sea salt


Whisk these dry ingredients together until well combined.


Next, combine the wet and dry ingredients. Mix to create a uniform batter. If you want to add some extra flavor, stir in walnuts or any other nuts you enjoy, we usually omit this right now because our daughter doesn't have all her teeth yet!



Baking Your Loaf


Pour the batter into a well-buttered loaf pan. Bake at 350°F for 45 minutes. You’ll know it’s done when a toothpick comes out clean.


Allow the loaf to set in the pan for a bit before transferring it to a cooling rack or a wooden cutting board to cool completely.


Try your best to wait at least 20 minutes before cutting the first slice! This helps maintain the integrity of the loaf, making it easier to store later.
