Always Glorious Muffins

The recipe above in the photo is for the carrot edition, but I make this recipe all year- it's delicious with zucchini and apple in the summer.


Alternatively, I like to use mashed fruit, like banana or peaches, or any other fruit simmered on the stove into a mash (then cooled) instead of, or for half of the yogurt portion.


Obviously the nuts can be changed up and the raisins for other dried fruit or chocolate chips.


I call it Always Glorious Muffins because I use the same base recipe to make a variety of muffin flavours depending on what we have in our pantry and fridge.


Dry ingredients:

  • 1.5 unbleached flour

  • 0.5 cup oat flakes

  • 1 tsp each baking soda & powder

  • 2 pinches of sea salt

  • 1 tbsp spice - like pumpkin spice, cinnamon


Combine the dry ingredients - option to stir in oat flakes after combining the wet and dry- but I often just include them with the dry ingredients.


Wet ingredients:

  • 2/3 cup brown or white sugar

  • 2/3 cup yogurt, or buttermilk- or mashed fruit (like banana) or pureed fruit

  • 1/2 cup olive oil- or melted butter, coconut oil

  • 2 eggs


Cream the wet ingredients together.


Now stir in:

  • 2 cup shredded fruit- carrot, zucchini, apple

  • 1/2 cup raisins - or other dried fruit, chocolate chips

  • 1/2 cup chopped nuts - walnuts, any nut or seed


Bake 25 mins in buttered muffin tins at 350F.

I make 12 muffins.
