A cake you can make even if you are not a baker..
because we definitely are not super talented bakers, so you got this one!
Best part, the ingredients are wholesome- so I feel pretty full-of-smiles when I eat a giant slice.
Cream these ingredients together:
3/4 cup butter
2 cups cane sugar
3 eggs
1 tbsp real vanilla extract
2 tsp fresh orange zest
Add:
1/2 cup whole milk or whole milk yogurt
2 1/2 grated zucchini
Next sift these ingredients together, and then fold them into the creamed mixture:
2 1/2 cup unbleached baking flour
1/2 fair-trade cacao powder
2 1/2 tsp baking powder
1 tsp cinnamon
1 tsp sea salt
Pour into a springform pan and bake at 350F for 45 minutes-1 hour until the toothpick pulls clear.
For real whipping cream:
Get 35% whipping cream- ideally chose from pasture raised/grass-fed cows for the best nutrition, eco-impact and happiest cows.
Pour into a wide mouthed cup.
Dust with cane sugar.
Get a electronic whisk, coffee frother or hand blender. Whisk until it thickens and foams up.
Top your giant slice of cake and enjoy!
This cake can be sliced and frozen nicely for preservation.
Also tastes great topped with ICE CREAM!
