Soft Oat Flour Bake > Great for Kids!

This is a perfect recipe to make for kids, especially toddlers who have not fully gotten all their teeth. It sneaks in a bunch of nutritious foods, all the while slightly sweet, but with no added sugar- unless you want to!


We find it is an easy breakfast bar or travel friendly lunch snack. Option to heat it up, straight from the fridge or room temp, our daughter will enjoy it any way.


Pre-heat over to 250F.

Wet ingredients:

  • Mash 4 small bananas

  • Whisk 3 medium eggs

  • 1/4 cup melted coconut oil, butter or olive oil- save some to grease the baking pan

  • Dollop of vanilla extract

  • If you want to add additional sweetness, add 1/4 cup maple syrup (we do this sometimes to mix it up!)


Mix dry & then add to wet:

  • 1.5 cup oat flour - grind oats in the blender until they are soft and no longer flakes

  • 2 tbsp ground seeds- I usually opt for 2 tbsp of ground flax seed, other options are nut butter, chia seed or ground nuts

  • Sprinkle of cinnamon


Combine all ingredients and pour into a pyrex type of baking pan (for casseroles).


Top the mix with a design of berries- I usually use blueberries or strawberries.


Place in oven for 1 hour. Check to see if it is brown enough for you.


Once you take the dish out and it has cooled for 10 minutes- if you want to use honey as additonal sweetness, now would be the time to poke some holes in the surface and drizzle on top as a glaze.


Store in fridge or cut into pieces and freeze.
